Feta Dip 


Feta cheese is a great match for pitas or lavash crackers. Try this easy dip with any variety of our Pita Break traditional pitas such as regular or whole wheat, or one of our thin and crunchy lavash crackers like Multigrain or Organic Whole Wheat. This is best made in a food processor. It makes about 3 cups of dip. This dip may be made 2 to 3 hours ahead of time and kept, covered, in the refrigerator.

 

3 cups (about 12 ounces) crumbled feta
8 large fresh basil leaves washed
2 tsp dried red pepper flakes
1 heaping tablespoon cracked black peppercorns
2/3 cup extra-virgin olive oil
¼ c fresh lemon juice
1 garlic clove peeled (if desired)
1 package of Pita Break pitas cut into triangles

 

In a food processor pulse together the feta, basil, and peppercorns until combined. Add the olive oil and lemon juice, alternating between each and pulsing after each addition, until the mixture is dense but spreads easily. Remove to a serving bowl, and chill until serving time. When ready to serve garnish with extra basil leaves, serve with pitas, olives, cucumber and tomatoes for an authentic Mediterranean treat.

For additional flavour, try placing pitas on a heated BBQ grill for 30 seconds a side until lightly grilled and crispy. Enjoy!
